Vegan Black Bean & Corn Salsa Recipe

Vegan Black Bean & Corn Dip

 

Ingredients:

One can of black beans

1 bag of sweet corn

¼ of a red onion diced

1 garlic clove diced

1 pack of less sodium taco seasoning

1 tsp of chili powder

2 tbsp of extra virgin olive oil

1 small jalapeno pepper diced (red and green)

 

 

Directions:

Over medium heat sauté diced red onions, jalapeno peppers, and garlic in olive oil

Rinse black beans and corn then drain using a strainer

Add black beans and corn to skillet with red onions, peppers and garlic

Add less sodium taco seasoning and teaspoon of chili powder

Sauté for approximately 12- 15 minutes, stir occasionally

 

Serve with vegan tortilla chips, vegan cheese and avocado. Enjoy!
